I Karen, Thanks for popping by, I still have some cupcakes left, you could have one but I don't think it would be edible by the time i posted it to you lol. With regards to the buttercream icing, to be honest I winged it, :o) but i suppose i used about a pack of unsalted butter and 1/2 a large box of icing sugar, 1 tsp vanilla extract and a drop of pink food colouring and just keep tasting it till its just right.
